Pure Taqueria is heading to Columbus, Georgia!

We’re so excited to announce that Pure Taqueria® is coming to Columbus, Georgia!

Located at 8186 Veterans Parkway, the newest location will mark the 7th taqueria for Pure. The restaurant broke ground on Tuesday, June 18 and plans to open in Fall of 2019.

Founded in 2005 by restauranteurs Michele and Chris Sedgwick, Pure Taqueria® came to fruition after many trips to Mexico.
The original PURE taqueria® opened in Alpharetta, Georgia at the site of an abandoned 1920’s era Pure Fuel Oil station and is fitted with roll-up garage doors, unfinished floors, and retro sinks and fridges. While the menu has grown and changed a bit throughout the years, Pure’s commitment to providing Guests with delicious food using high-quality ingredients still holds strong.

Along with a large selection of gluten-friendly, vegetarian, and vegan options, Columbus residents can look forward to enjoying handmade corn tortillas on their tacos this Fall. This past year, Pure has served house-made corn tortillas exclusively. Corporate Chef, Carlos Cisneros, and the rest of Pure’s corporate team are working to develop the best tortilla in Georgia. “We’ve nailed down the first step," says Cisneros. The next step for the group is to have every location begin grinding, prepping, and soaking its own corn through a process called nixtamlization. You can read more about the process here.

Jigar Shah and Suresh Kumar, longtime residents of Columbus, knew something was missing and saw an available market for a Pure Taqueria®. When in the mood for Mexican, Jigar and Kumar’s families would make the nearly 2 hour trip up to Atlanta to enjoy Pure for lunch or dinner. They explained to us that while Columbus is full of Tex-Mex restaurants, it’s really missing a Mexican restaurant with an upbeat, fun atmosphere. The margaritas, ambiance, and food may have caught their attention, but “seeing the emphasis that is placed on ensuring future owners believe in Pure’s values is what really confirmed our decision to open a store,” Jigar explained. “If we were just handed a franchise after strolling in, we might not feel the same way,” he says, “but the way Pure’s corporate team has approached this process… although it’s been a long journey, has made it worth it.” The pair are excited to bring the fresh, upbeat atmosphere to Columbus and to introduce what they love about Pure to Guests, new and old.

Pure’s corporate team headed down to Columbus on Tuesday, June 18 to celebrate the groundbreaking. For now, Columbus residents can expect classic margaritas like the Double Barrel Margarita, which features Herradura Double Barrel tequila handpicked by the Pure Team, as well as crowd favorites like Queso con Todo, Totopos de Salmon, Tacos de Coliflor, the Burrito Ahogado, Cazuela, Carne a la Parilla, and more! While you can definitely feel the PURE ‘vibe’ at every store, each Pure location brings something a little different, whether it be a rooftop, veranda, or outdoor Plancha. Columbus will be the first location to feature a Tequila Tasting Room, perfect for meetings, tequila dinners, and/or private parties, as well as an outdoor lounge area with a fire pit where Guests can relax with a margarita in hand!
